The Story of Nebrasa

A Legacy Born of Light, Land, and Time

Nebrasa was born on February 22, 1939, in a small village in the heart of Sinai — a land where the wind carries history, and the soil holds the memory of every hand that has cared for it.

When her father first held her, he looked into her face and said:
“I will name her Nebrasa… for she shines like a lamp even without flame.”

And so she grew, carrying a name that meant light — and a destiny rooted in the land.


Childhood Among Olive Trees

Nebrasa’s childhood unfolded among olive groves.

She walked beside her father at sunrise, watching how he spoke to the trees as if they were family. He taught her that olives were not simply harvested — they were respected. That oil was not produced — it was earned through patience.

She learned how to pick fruit gently, how to wait for the perfect season, and how time itself shaped flavor.

But her childhood changed forever on May 15, 1948, when her father left for the Palestine War… and never returned. He was martyred, leaving behind his groves — and his young daughter.

Grief filled her heart.
But it also filled her with purpose.

She chose to continue his path.


Carrying the Legacy

As she grew older, Nebrasa took her father’s place among the trees.

She harvested olives with her own hands and learned the traditional Sinai methods of pressing oil — slow, careful, untouched by haste.

Her first production was small. She poured the oil into simple glass bottles and wrote, in her gentle handwriting:

“Nebrasa.”

She did not sell it at first.
She gifted it — to neighbors, to farmers, to families in need.

But the village soon realized her oil was unlike any other. Richer. Smoother. Warmer.

They urged her to share it beyond gifts, and slowly, her oil began to travel from home to home — carrying her name with it.


Honey — The Second Gift of the Land

Beyond the olive groves, Nebrasa found another calling in the quiet hum of bees.

In spring, she tended small beehives near the fields, harvesting honey with patience and care. She believed honey, like oil, was a blessing that required respect.

She used it for nourishment, for healing, and often blended it with olive oil in traditional remedies passed down through generations.

She would say:
“Oil strengthens the body… and honey restores the soul.”

To her, the two were inseparable — twin gifts from the same earth.


Teaching the Next Generation

As years passed, Nebrasa became known not only for her products, but for her wisdom.

Children gathered around her during harvest seasons. She taught them how to care for olive trees, how to harvest honey without harming the bees, and how patience shaped everything worth making.

She never rushed a process.
And she never allowed shortcuts.

Her legacy spread quietly — not through markets, but through hands she trained and hearts she shaped.


When Memory Began to Fade

In her later years, time took its toll.

Nebrasa developed Alzheimer’s. Faces faded from her memory. Names slipped away.

But two things remained clear:

Her olive oil.
Her honey.

Fearing her knowledge might be lost, she began writing everything she knew into a small handwritten book — her methods, her blends, her observations, her life’s work.

She hid the book inside her small Sinai cottage.

Before she could reveal it to anyone… illness silenced her memory completely.

The book remained hidden.
Waiting.


The Discovery

On April 24, 2024, while preparing to launch our own olive oil project in Sinai, we rented farmland that included an old abandoned hut.

Inside, time had settled into every corner.

On a wooden shelf, we found:

  • A small glass bottle of olive oil labeled “Nebrasa”

  • Jars of natural honey

  • And a worn handwritten notebook

Her notebook.

Within its pages lived her secrets — her techniques, her philosophy, her devotion to purity.


Nebrasa Reborn

From those pages, Nebrasa’s legacy was reborn.

We did not reinvent her methods — we honored them.

Today, Nebrasa lives again through:

  • Extra Virgin Olive Oil crafted with patience

  • Natural Honey harvested with care

Each product reflects the same belief she lived by:
That food made honestly carries light within it.
